One for a New England style and one for a West Coast. We chose the NEIPA, obviously, but it got us thinking about it’s older, bitterer cousin from California. It’s a style we love to drink but one we don’t take as seriously as a producer (and we feel a lot of other breweries are the same way inclined).
This beer, we hope, will be the beginning of the end of that way of thinking at Dig Brew. Built up with a medium bitterness level; a clean fermentation with US05 and a hearty dry hop of Cascade, Centennial and Simcoe before being conditioned far long and colder in one of our horizontal lagering vessels this beer has had us ripping up the schedule for the rest of our summer brews to make space for more WC inspired beers. Expect pine, it’s fine.
